One of the snack foods/appetizers I put together for my birthday party just over a week ago was a dip made with sun-dried tomatoes and feta cheese. Other ingredients included fresh oregano that I’ve been growing myself, some dried thyme, garlic powder, milk, and some freshly ground black pepper. To serve it, I had some plain ridged potato chips and onion and garlic chips.
1/2 c sun-dried tomatoes in oil, drained and coarsely chopped
1 clove garlic or 1/2 tsp granulated garlic
1 tsp dried thyme
1/2 tsp dried oregano (I used about twice as much fresh because I prefer fresh oregano)
3/4 c milk
1 tsp black pepper
chips and/or veggies to serve
Process all ingredients together in a food processor until smooth or desired consistency.
(I didn’t have a food processor when I put this together, so I had to settle for just mixing vigorously by hand. It came out just fine, especially after sitting overnight to let the flavors mingle, which I’d recommend anyway.)
